Tiramisu Cupcakes.

I love baking.

I made cappuccino cupcakes with marscapone icing and then chucked some Bailey’s in and made Irish Coffee cupcakes and oh my God, it’s so freaking fluffy. Fluffy and light and sweet and yummy. It’s like eating a cloud. I’m not usually this braggy about stuff I make because I’m really not that good a baker, but dear god in Heaven that stuff is good. I don’t think it’s actually got anything to do with me. Marscapone is just bloody ambrosia or something. Gah! *flails and runs off to eat cupcakes*

The last ones are my favourite. I LOVE carrot cake.

Just made carrot cake cupcakes and oh my God they are good.

First time I’ve made carrot cake. I think it’s my new favourite thing.

The results of this morning’s Adventure in Baking Before Sane People Are Even Awake: Cinnamon Vanilla Coffee Cupcakes

Contrary to expectations, logic and the application of truly ludicrous amounts of red food colouring, my Red Velvet Cupcakes are…orange.

There is a truly ridiculous amount of red food colouring in this. These cupcakes had better come out RED.

The fruits of yesterday’s kitchen-y labours.

Miniature muffins in many flavours:

Lemon with vanilla whipped cream,

Lemon with buttercream icing,

Chocolate orange with chocolate buttercream icing,

Lime, vanilla and cardamon with buttercream icing,

and chocolate, vanilla and cinnamon with chocolate buttercream icing.

The proportions were a bit off with the plain buttercream so it hasn’t held it’s shape too well, but I’m quite pleased with these, overall.
